SPANISH ROJA
Spanish Roja is listed in the Seeds of Diversity Canada catalogue of heritage varieties. Introduced to the Northwest in the early 1900's, 'Spanish Roja' is a robust garlic, excellent for roasting and quickly becoming a popular gourmet variety in high demand. Bulbs are generally 1-1/2 to 2-1/2" in diameter. Cloves usually number 6 to 11 per bulb, and peel easily. The raw flavor is sharp and full-bodied, (It has been described as the most piquant garlic in the world) but once subjected to heat it mellows and deepens.
